The first book that Ali Segersten and Tom Malterre wrote together, The Whole Life Nutrition Cookbook, changed the way I ate. I was already health conscious and have never been into diet trends. I was "vegetarian" and before that "vegan," but that was about the extent of my idea of eating in a way that was sustainable for the environment and my body. In my early-twenties I gathered enough information to figure out that peanut butter and jelly sandwiches, soy milk, Tofutti Cuties, pasta with marinara and other "vegan" foods likely weren't helping my body. I may have saved some animals during that time of my life, but it definitely wasn't the healthiest dietary option! I wrote "early-twenties" for a reason. I should have written "EARLY TWENTIES!!!" We should not send our college-bound kids into the world to try to figure these things out for themselves!
I gradually filled in some pieces, adding more vegetables, dropping all soy, eating some fish and poultry (after 17 years of not eating animals); it was an evolving journey. My first pregnancy was a wake-up call in many ways. I was fairly healthy, exercised regularly, started at a good weight, gained weight well, etc.., but I could not handle the glucose challenge and ended up with "gestational diabetes" written in red on my folder. I also had the worst aphthous ulcers after the cesarean birth of my breech daughter. I was constantly bloated and all the probiotics and cultured foods I could find would not help. That led me to find their first book. Removing gluten from my diet stopped the mouth ulcers almost immediately.
